Reading: Sauteed Chicken Livers
A cultural thing
I ‘m not sure what happened in the United States to render organ meats as disqualify for human consumption. According to this Wikipedia page, the classical serve of liver-colored and onions ( which is normally made with gripe liver ) was actually very popular here in the twentieth hundred ( I ‘m guessing by and large in the first half ), but organ meats are rarely consumed today in the US. During my beginning few years here in the US, whenever I purchased chicken livers at Whole Foods, I was asked : “ Is this for your dog ? ” Um, no. This is for my identical homo family. I do credit the paleo motion for raising awareness and making more people realize that inner organs are worth considering and that eating them is the ethical option for meat-eaters. Eating just muscle meat is uneconomical. a long as we raise animals for our food, we should treat them well while they are animated, slaughter them humanely, and utilize their solid soundbox .

Since I cook the onions and the livers over average inflame I believe it ‘s very well, but if you ‘re not convinced, you can use butter or ghee alternatively. Kosher salt and black pepper : If using fine salt, you should reduce the sum you use, or the serve could end up excessively salty .

Expert tip
As I mentioned above, I actually liked livers as a child, angstrom retentive as they were not overcooked. Chicken livers should still be pink in the middle when you ‘re done cooking them. If you cook them until they ‘re well-done, they ‘ll be pretty much inedible – dry and farinaceous. But when by rights cooked, they have a wonderfully crank mouthfeel and they are besides quite balmy in terms of their spirit. Though I should probably mention that the USDA recommends cooking poultry inner organs to an home temperature of 165 °F .
